Chocolate Hazelnut Cookies
I love these cookies when I’m craving something chocolate… and I LOVE chocolate hazelnut anything! I like to switch up the nuts to change them up, my other favorite is walnut!
INGREDIENTS
1/2 cup butter or virgin coconut oil soft or slightly melted
1 cup coconut sugar
1 large egg
1.5 tsp vanilla extract
1 cup all-purpose flour plus 2 tablespoons more, if needed
2 tbsp arrowroot powder/starch
1/3 cup cacao powder
1 tsp baking soda
1/4 tsp sea salt
1/2 cup crushed hazelnuts or nuts of choice
DIRECTIONS
1. Preheat the oven to 350 F. Line a Baking Sheet with parchment paper and set aside for later use.
2. In a medium bowl, cream together softened butter or oil, coconut sugar, egg, and vanilla extract with a fork until light and fluffy (1-2 minutes).
3. In a separate medium-large bowl, with a fork or whisk mix the flour, baking soda, salt, cacao powder, and arrowroot until combined.
4. Power the wet mix into the flour mix bowl and mix until well combined.
5. Fold in the nuts. If the dough seems too thin and oily, add 1-2 more tablespoons of flour or I put it in the fridge for a few minutes to firm up (this happens more with melted vs softened butter/oil).
5. Form about 15-16 heaping tablespoon-sized dough balls and place them about 2 inches apart on a parchment paper-lined baking sheet.
6. Bake for 9-11 minutes until the edges are set.
7. Cool cookies on the baking sheet for 5 minutes, then move to a wire rack to cool fully. Store airtight.
NOTES:
I like to roast my hazelnuts as my oven is pre-heating (keep a timer on them).
Other great nut options are walnut, pecan, brazil nuts, and almonds.
